Saffron harvested and packaged in Chatham-Kent
After moving back to Chatham Kent and settling in, my wife and I thought that we would try our luck at growing and producing a unique and different crop not known to the region. After many months of research, seminars and talking to other growers we decided to start a small plot of Crocus Sativus (Saffron).
One of our main draws to saffron is the suggestion that it is effective in the treatment of a wide range of ailments. It has shown benefits for treating mental health disorders, such as depression, anxiety, and ADHD. Saffron also has anti-inflammatory and antioxidant compounds which can provide benefits in protecting a person from cancer and heart disease.
With saffron being a key component in European, Middle Eastern and Indian cuisine, the aroma and flavour are one that is hard to describe. Fresh saffron smells sweet like fresh cut hay with a flora aroma. The flavour is slightly bitter with the sweet taste of honey. Saffron is unique in the way that everyone experiences the aroma and taste differently.
